Yum.

Last night, I made this.

It was by no means quick.

The making of it may not have been without drama.

But…

It’s delicious, and this makes me happy.

      Totally. I made a few adjustments (use cooking spray for the risotto and only 2 tsp of olive oil to caramelize the onions, used red wine vinegar instead of balsamic, and used dried rosemary instead of fresh), and it was really good. Next time I would probably reduce the vinegar (or get some balsamic — the only kind I had was blackberry flavored!), but it was quite good, VERY hearty, and made a ton!!

      Yum! That looks good — really similar, but just enough different that I bet it hits a different craving. I’ll have to try this one, too! Thanks!
